We all love a cupcake, and everyone has their favourite cocktail (mine’s a Mojito, what’s yours?), so these tasty treats are a win win combination! My Cocktail cupcake recipes are ideal for a hen party, girls night in, and many other occasions. I’m guessing you’ve made cupcakes before. Now, why not make these cupcakes with a twist!

Basic Cupcake Recipe
Ingredients (makes 12 cupcakes):
180g butter or margarine (at room temperature)
180g caster sugar
3 eggs (beaten)
1½ tsp vanilla essence
180g self-raising flour
1½ tsp cream of tartar
3 tbsp milk
*12 foil cupcake cases (4 gold, 4 silver, 4 purple)
12 hole muffin tin
Buttercream Icing:
500g icing sugar
250g unsalted butter
Piping bag and *large coupler
*Wilton 1M piping nozzle
Method:
1. Preheat the oven to 170C/Gas Mark 3. Line the muffin tin with the foil cases.
2. Cream the butter and sugar together in a bowl until pale.
3. Add the eggs gradually, and mix until smooth. Add the vanilla essence
4. Sieve in the flour and cream of tartar and fold into the mixture.
5. Mix the milk in to loosen the mixture.
6. Fill the foil cases with an ice-cream scoop full of mixture each.
7. Put in the oven for 20 minutes until light golden brown and springy to the touch. Place on a cooling rack to cool.
8. Mix sieved icing sugar and unsalted butter together.
Strawberry Prosecco Cocktail Cupcake Recipe

Ingredients:
4 cupcakes
5 strawberries
8-9 tbsp Prosecco
A third of the buttercream icing
Pink gel food colouring
Popping candy
*Cupcake Corer
Method:
1. Chop 3 strawberries into small pieces. Cut 2 strawberries into heart shaped slices.
2. Put the chopped, and sliced strawberries into two separate ramekins and pour 2tbsp of Prosecco into each (leave to infuse for at least 2 hours).

3. Using a cupcake corer, scoop out some sponge from the centre of the cupcake. Push the corer three-quarters of the way into the centre of the cupcake then twist the corer and pull it out.


You can then push the inside of the cake from the corer.
4. Fill the centre of the cupcakes with a couple of teaspoons of your Prosecco infused chopped strawberries.

5. Poke a few holes around the top edge of the cupcakes and drizzle half a tablespoon of Prosecco into the sponge of each one.
6. Add some pink food colouring and 2-3 tablespoons of Prosecco to your buttercream and mix well. Fill your piping bag with the mixture and pipe a swirl of buttercream on top of your cupcakes.
7. Sprinkle your buttercream with the popping candy and add a strawberry heart slice to the top (serve immediately, otherwise leave the popping candy until just before serving).

Mojito Cocktail Cupcake Recipe
Ingredients:
4 cupcakes
Zest of 1 unwaxed lime
Juice of half a lime
2-3 tbsp white rum
A handful of mint leaves
A third of the buttercream icing
Green gel food colouring

Method:
1. Poke some holes into the cupcakes with a cocktail stick and drizzle 2 tsp of lime juice over each one.
2. Finely chop half of the mint leaves and sprinkle over the top of the cupcake.
3. Add the white rum and food colouring to the butter icing and mix well.
4. Fill your piping bag with the buttercream, and pipe swirls on top of the cupcakes.
5. Grate the lime zest over the butter icing. Top with a small mint leaf.
Cherry Brandy Cocktail Cupcake Recipe
Ingredients:
4 cupcakes
8 black cherries
4 tbsp cherry brandy
2-3 tbsp brandy
A third of the buttercream icing
*Edible gold leaf

Method:
1. Pit and Chop 4 cherries into small pieces.
2. Put the chopped cherries into a ramekin and pour over 2tbsp of cherry brandy. Leave at least 2 hours to infuse (overnight is better).

3. Core the cupcakes as per the Strawberry Prosecco instructions, and put a teaspoon or 2 of the infused cherries into each one. Poke some holes in the cupcakes with a cocktail stick and drizzle half a tablespoon of cherry brandy onto each one.
4. Add 2-3 tbsp of brandy into the buttercream icing and mix. Then fill the icing bag with the buttercream and pipe swirls on top of the cupcakes.
5. Add pieces of the gold leaf using a pair of tweezers, and put a whole cherry on top.


Display your cupcakes on a cake stand and serve with Prosecco, Cherry Brandy, or Mojitos!
